The human body is dependent on the quality of food and no less its compatibility with the needs of the body. If we do not eat, we die. The pectin content of carrots has been shown to be effective in lowering blood cholesterol levels. Eating two medium-sized carrots a day can reduce cholesterol levels 10 to 20%. Carrots also contain a small amount of lecithin which is also effective in helping normalize cholesterol.
These groups of compounds found in carrots all have one thing in common. They all act as anti-inflammatory agents.
